“It’s not Tokyo, but it’s close.” That’s the promise behind in between days, Florida’s first Tokyo-style sake and listening bar, and one of St. Pete’s most recent additions as a recommended restaurant in the 2026 MICHELIN Guide Florida. Blending French and Japanese flavors on a rotating menu of small bites and inventive dishes, Chef Justin Shewtzer works alongside a team of five in-house sake sommeliers led by Noah Sain to craft a dining experience enjoyed in unique surroundings you won’t forget. Inspired by the underground “listening bars” of Tokyo, in between days is located inside a small house that creates a big vibe, thanks to a pair of vintage 1972 speakers and two turntables fueled by a diverse collection of vinyl records. With oil lanterns casting a soft glow, guests can sip on sake and take in tunes while savoring plates of chilled oysters, ramen flavored by more than 30 ingredients and a rotating izakaya menu that changes weekly based on the freshest seasonal ingredients they can find. Some recent favorites include Korean-braised short rib dumplings with carrots, parsnip puree and crispy shallots; Japanese yellowfin tuna with prickly pear emulsion, green tomato and thai birdseye chili; and spicy beef broth with coconut milk and char sui pork lardons. In addition to its 2026 MICHENLIN nod, In Between Days has been featured in Food & Wine, The Wine Enthusiast, Tampa Bay Times and more. The restaurant is open for dinner Wednesday through Sunday.
